Our unique ciders are made from heritage varieties of English and French cider apples. Each of them is a blend of apples aimed at a particular palate. Some, like the House, MerriBerri and Traditional are designed to be enjoyed as a glass or a pint, with or without food. Others are more akin to wine like the Normandie and Somerset and pair best with food. Our Scrumpy and Cyser are rich in history from medieval times of Olde England.
Fortified wines are increasing in popularity. Like Port, they are made from a combination of wine, or cider, and spirits. We are lucky to be able to use spirits made from the same fruit the wine is made from (many other wineries use neutral grain alcohol because they don’t have a distillery of their own). Fortified wines are usually sweeter than wine and have higher alcohol content often between 17 and 20%. Dessert is a great time for our Winter Apple, Pomme Oh or Mure Oh. Each is great with cheese or other favourite for after dinner.
Spirits are made from many different sources of alcohol. Our spirits are made from BC fruits and distilled in an Alembic Still in small batches. We use some of the spirits we make in our fortified Dessert wines and some are sold as Oh de Vie or Brandy. The brandies are aged in oak barrels to create that luscious caramel colour. We have also created a smooth fruit based vodka called Frizz.
