Join us October 3rd and 4th at 6:00 for an extraordinary evening of food, drink, and conversation, as we finally tap into the one and only barrel of whisky that we've had quietly aging over the past seven years.
Your evening starts in the distillery with Whisky samples and hors d’oeuvres. Here, you will learn how the whisky was made. You will be walked through the reduction process of spirits, and learn why our slow chilled batch methods make a difference to the smoothness. Then, it will be time to engage the nose and the palette. Receiving samples of 3 proposed finished strengths at 40, 44 and 48%; you will be the judge of your perfect whisky after learning tips for tasting.
This customized whisky offering will be available for you to order at this event only. Once we bottle the remainder of the whisky at our preferred blend, it will be released slowly until sold out, much like the time it took to make it. It is the first, and likely the last whisky we will make.
Once satiated with this fine libation, we will move into the bistro for a pig roast feast and finish with mile high apple pie. Other spirits (including the whisky), cider, and wine will be available for sale with your dinner in the bistro.
• This evening will require an appetite, a desire to enjoy the finer things in life, and an acute sense of curiosity. It will be engaging on all levels- a fondness for whisky is a bonus.
• Your customized strength bottles will be blended and ready for pick-up a few weeks later.
• The price of the evening includes appetizers, whisky tastings, dinner, and a full distillery experience. Taxes and gratuities are extra.
• Additional beverages with dinner in the bistro are extra.

A bit more about the whisky itself...
Why is it called Whisky Jacks? In loving memory of the men named Jack in our lives who cherished whisky, we thought it fitting to name our first and last barrel of whisky after them. Janet’s father, Jack Docherty, loved a good glass of whisky with his friends before his passing in 1983. Rick’s dad, Jack Pipes, used to sit down each night before supper with a dram of his favourite malt spirit before he left us in 2012. Janet’s grandfather, Jack Crean, also relied on a routine that included whisky on a regular basis. So until it is all gone, we toast these Jacks.
Distilled and barrelled from organic malt in 2007 we have one barrel only, less the portion lost to the angels. This whisky began its life in 2007 in a new French Oak barrel made by Okanagan Barrel Works. In November 2012, we decided the whisky needed more of a merridale feel. After our first batch of Cowichan Cider Brandy was removed from barrel, we moved the whisky into it to create a softer finish. There it has rested for almost two years and it is now ready.
